Broad Bean, Pea & Mint Salad

This simple, vibrant dish is a celebration of early summer’s freshest stars – broad beans, garden peas, mint, and lemon. These seasonal gems are not only bursting with colour and flavour but also rich in nutrients that support energy, digestion, and hormone balance. INGREDIENTS

Ingredients

2 cups fresh or frozen broad beans

2 cups of fresh or frozen garden peas or petit pois

1 small red onion

1 lemon

1 small bunch of mint

Extra Virgin Olive oil

Sea salt & freshly ground black pepper


METHOD

Cook the broad beans and peas in boiling water for 2 mins and refresh in cold water, set aside

Finely dice the red onion and place in a bowl

Zest the lemon into the bowl

Add a good glug of olive oil, sea salt and freshly ground black pepper

Finely chop the mint

Add the beans and peas, mint, juice of 1/2 lemon, stir well and serve
