Tempeh Smashed Pattie Burger

INGREDIENTS
250g tempeh, steamed for 10mins
250g chestnut mushrooms
1 small bunch of dill
1 small bunch of chives
1 small bunch of parsley
1 large onion
3 clove garlic, crushed
1 tsp smoked paprika
1 tbsp tamari
1 tsp salt
½ tsp ground black pepper
¼ cup milled flaxseed
To serve: burger bun, vegan cheese, chipotle mayo, micro greens, tomatoes, cornichon (cut in half lengthways)
METHOD
Steam the tempeh for 10 minutes and allow to cool
Chop the mushrooms and onions, crush the garlic
In a large frying pan add 2 tbsp olive oil and gently heat, add the mushrooms, onions and garlic and gently cook until soft
Add the smoked paprika, tamari and chopped herbs, salt and pepper
Transfer everything into a blender and blitz the tempeh and herb mixture until mixed together with the milled flaxseed
Divide into 8 patties and layer them onto a plate with baking parchment between each patty and store in fridge until ready to fry
In a large pan, add another tbsp olive oil and heat. Fry the patties on either side until brown, about 4 minutes of each side
Add a layer of cheese to each patty and melt
Toast your brioche bun and assemble your burger
Chipotle mayo, shredded lettuce, tomato, double cheese pattie, cornichon and more mayo.
