Tomato & Rose Harissa Tart
This vibrant tomato tart is a celebration of seasonal summer produce at its best—quick to prepare and bursting with flavour.
Using a mix of ripe heirloom, plum, and cherry tomatoes means every bite is juicy, sweet, and full of character.
Tomatoes are not only delicious but also packed with health benefits—they're rich in vitamins C and A, and a powerful antioxidant called lycopene, known for supporting heart health and reducing inflammation.
Paired with rose harissa for a little kick and a scatter of fresh herbs, this tart makes a perfect light lunch or simple supper.
Just add a crisp green salad on the side, and you’re good to go.
INGREDIENTS
1 sheet Gluten Free ready rolled puff pastry
2 tbsp rose harissa
500g of tomatoes, a mixture of heirloom, plum and cherry
1 clove garlic, grated
3 tbsp of chopped herbs (coriander, parsley, oregano)
1 tbsp of olive oil
Sea Salt & freshly ground black pepper
METHOD
Set oven to 200c
Cut the tomatoes in half or quarter depending on their size, place them in a bowl.
Chop the herbs and grate the garlic into the same bowl and mix with a splash of olive oil.
Stir in sea salt and freshly ground black pepper and set the bow aside.
Line a baking tray with baking parchment and place the sheet of pastry on top.
Using a fork prick the pastry leaving an inch around the edge, this prevents the pastry from puffing up.
Spoon two tbsp of rose harissa into the pastry and spread so the forked area is covered.
Spoon the tomatoes onto the harissa making sure they do not cover the edges.
Bake in the oven for 20-25mins or until golden brown.
Serve with a simple green salad and mustard dressing.
