Smoked Salmon & Cottage Cheese Frittata
This is one of those brilliantly simple recipes that works at almost any time of day — a protein-packed breakfast, an easy lunch or a light dinner served with a crisp green salad. It’s also perfect for making ahead and taking to work, as it keeps well and is just as delicious cold as it is warm.
With eggs, smoked salmon, cottage cheese and ground almonds, this frittata is naturally rich in protein, helping to support muscle health, maintain energy levels and keep you feeling satisfied between meals. The salmon also provides beneficial omega-3 fatty acids, while the almonds add healthy fats, fibre and important micronutrients. Fresh dill and spring onions bring plenty of flavour, so you need very little else.

INGREDIENTS
100g wild organic salmon
¼ cup chopped dill
½ cup cottage cheese
½ cup ground almonds
½ tsp baking powder
2 spring onions, sliced
8 eggs, whisked
METHOD
Set the oven to 180c
Line a flan dish with baking parchment
Add all ingredients to a large bowl and whisk together, ensuring no lumps and a well-mixed consistency.
Pour into the prepared flan dish and bake for 15-20 mins; check that it's cooked through with a skewer or knife.
Remove from oven and let rest for 10mins while you make a quick green salad
Cut into 4 and serve with salad and simple French dressing
