Cottage Cheese, Oat & Banana Pancakes

These High-Protein Banana Pancakes are a brilliant breakfast for busy mornings, lazy weekends or school holidays — and they’re ready in just five minutes.

Naturally sweetened with ripe banana (perfect for using up those slightly squishy ones in the fruit bowl!), they combine oats, eggs and cottage cheese for a satisfying boost of protein and fibre to help keep everyone fuller for longer.

Simply throw everything into a blender, blitz and cook. Serve warm with fresh berries, poached seasonal fruit, yoghurt, chopped nuts or a little drizzle of maple syrup. Quick, nourishing and delicious — and a great way to get a little extra protein into children without them even noticing.


INGREDIENTS

1 cup jumbo oats

1 medium banana

1 teaspoon vanilla extract

2 teaspoons baking powder

½ teaspoon cinnamon

2 eggs

½ cup cottage cheese

Toppings: berries, poached stone fruit, yoghurt, maple syrup and chopped nuts


METHOD

Place all ingredients in a blender and blend until completely smooth, about 30 seconds.

Using a nonstick pan or pancake maker, brush with oil and heat over medium heat.

Drop ¼ cup of batter onto the pan.

Cook until bubbles appear on top. Flip and cook until golden brown on both sides. 

Top with your favourite toppings: berries, stone fruit, yoghurt, maple syrup and chopped nuts

Makes 6 pancakes
