Overnight Chocolate Chia Pudding
A Nutrient-Dense Start to Your Day
This simple, make-ahead chia pudding is more than just a chocolatey treat — it's a nourishing bowl packed with powerhouse ingredients that support your body and mind.
At the heart of the recipe are chia seeds — tiny nutritional giants. Chia is one of the few plant-based complete proteins, meaning it contains all nine essential amino acids your body can't produce on its own. These little seeds are also rich in soluble fibre, which supports digestion, promotes satiety, and helps balance blood sugar levels. They’re an excellent plant source of omega-3 fatty acids, which play a key role in brain and heart health.
The rich, chocolatey flavour comes from raw cacao, a true antioxidant powerhouse. Unlike processed cocoa, raw cacao is minimally processed to retain its full spectrum of nutrients — including iron, magnesium, and calcium — along with flavonoids that help reduce inflammation, support cardiovascular health, and even boost mood.
Cinnamon adds a warming note and comes with its own health benefits — particularly its ability to help regulate blood sugar levels, making this pudding an ideal breakfast or snack for maintaining steady energy.
The addition of kefir offers a generous dose of gut-friendly probiotics, while flaxseeds bring even more fiber and healthy fats. Finished with walnuts for crunch and omega-3s, berries for a burst of vitamin C, and coconut for texture and healthy fats, this is a deeply satisfying bowl of goodness.
Wholesome, easy, and ready when you wake up — this is a recipe that makes eating well feel effortless.
