Iced Matcha Bounty Bars

These homemade Iced Matcha Bounty Bars are a deliciously wholesome twist on a classic treat—rich in coconut, subtly sweetened with maple syrup, and boosted with the antioxidant power of matcha.

Unlike shop-bought bars that are often packed with refined sugars, additives, and ultra-processed ingredients, these bars are made with simple, nourishing whole foods.

Creamed coconut and coconut oil provide healthy fats that support brain function and energy levels, while matcha brings antioxidant and anti-inflammatory benefits.

They’re naturally sweet, satisfyingly indulgent, and a brilliant freezer-friendly snack or dessert for anyone looking to eat well without compromising on flavour.


INGREDIENTS

1 bar of creamed coconut

6 tbsp coconut oil

1 tsp matcha powder

½ tbsp vanilla extract

3-5 tbsp maple syrup

Pinch of salt

150g unsweetened desiccated coconut

3-4 bars of chocolate – 70% or higher


METHOD

Line a 20cm square brownie tin with baking parchment.

Place the bar of creamed coconut into a bowl of hot water and massage it until it softens completely.

In another bowl place the coconut oil, 1 tsp matcha, vanilla and maple syrup and whisk in the creamed coconut. Stir a little water (1-2tbsp) for a creamier consistency.

Press the coconut mixture into the tray and freeze for at least an 1hr.

Meanwhile melt the chocolate and allow to cool until it thickens.

Remove the bars from the freezer and cut into 20 squares.

Dip into the chocolate and place back into the fridge until set.

Place in the freezer until ready to enjoy.
