With no gluten or refined sugar, these golden, chewy bars are the perfect anytime snack—energising, satisfying, and bursting with the feel-good flavour of early spring.


INGREDIENTS

3 tbsp lemon juice
1½ tbsp chia seeds
1 cup of oats, blitzed in a blender to make a rough flour
¾ cup unsweetened desiccated coconut
2 tbsp lemon zest
½ tsp baking powder
2 tbsp apple sauce
2 tbsp coconut oil, melted
1 tsp vanilla extract
¼ cup maple syrup
8 medjool dates, cut into small dice
Pinch of sea salt 


METHOD

Preheat the oven to 150c  and line a 8x8inch baking tin

In a small bowl add the lemon juice to the chia seeds and set aside until they swell

In a medium sized bowl mix all the dry ingredients together including the lemon zest

In a small bowl melt the coconut oil, stir in the apple sauce, vanilla extract, maple syrup.

Chop the dates into tiny pieces then whisk into the wet ingredients

Stir through the dry ingredients and press into the prepared tin

Sprinkle with 2 tbsp desiccated coconut and bake for 30mins or until they begin to turn golden brown

Remove from the oven, allow to cool then cut into 16 squares
