INGREDIENTS

1 onion, diced

2 celery stick, diced

5 cloves garlic, crushed

2inch pace of ginger, grated

1/2 fennel bulb, diced

1 tsp curry powder

1 tsp garam masala

1 can green lentils + liquid

1/2 tin coconut milk

1 tsp veg boullion


METHOD

In a heavy based saucepan with heat 2 tbsp olive oil

Add the fennel, onion and celery and cook for 5mins until soft

Add the garlic and ginger and cook for another 2 minutes

Stir through the spices then add the lentils and their liquid, veg bouillon and coconut milk

Cook for another 5 mins the blend until smooth

Serve with roasted broccoli, a drizzle of kefir and a sprinkling of Zoe Daily 30+
