Coconut, Cherry & Almond Bliss Bites

These Coconut, Cherry & Almond Bliss Balls are a deliciously nourishing way to fuel your body and satisfy your sweet cravings.

Almonds and seeds provide a powerhouse of plant protein, magnesium, and healthy fats to keep blood sugar steady and energy levels sustained.

Naturally sweetened with dates and maple syrup, these bliss balls are the perfect wholesome snack for an afternoon energy boost or post-workout treat.


INGREDIENTS

1 cup unsweetened desiccated coconut

3/4 cups almonds, chopped

½ cup sunflower seeds

¼ cup pumpkin seeds

¼ cup sesame seeds

2 tbsp milled flaxseed

¾ cup 85% chocolate or chips

½ cup nut or seed butter

3tbsp maple syrup

6 medjool dates

100g sour cherries

1 tbsp coconut oil, melted


METHOD

Chop the almonds into small pieces

Place the almonds, coconut, sunflower seeds, pumpkin seeds, sesame seeds, and ground flaxseeds into a large fry pan..

Put the pan on the stovetop over medium heat and stir regularly until lightly toasted, about 7 minutes—make sure it does not catch or burn.

Melt the chocolate, nut or seed butter and the maple syrup together and place the nut mixture and the chocolate into a blender with the sour cherries, dates, coconut oil and 2 tbsp water

Blitz until thoroughly combined, and can make into balls

Using your hands, roll into about 15-20 walnut-sized balls and place them on a baking sheet lined with parchment.

Place the baking sheet in the freezer for 15 minutes (or fridge for 30 minutes) to solidify.

Store the balls in an air-tight bag or container in the fridge for up to 3 weeks, or in the freezer for up to 3 months.
