INGREDIENTS

1 Block of silken tofu - I love the brand Clearspring

1 medium banana or ½ banana

1.5 cups frozen blackberries

1 tablespoon honey or maple syrup (optional)

1 tbsp chia seeds

1 tbsp flaxseeds

Topping:

Blackberry compote – 1 cup frozen blackberries & 1 tbsp maple syrup

Roasted coconut flakes

Chopped walnuts


METHOD

Gather the ingredients.

Drain the silken tofu to remove excess water (silken tofu has a high water content).

Add all the ingredients into a high-speed blender and blitz until smooth

Make the blackberry compote by defrosting frozen blackberries in pan with 1 tbsp maple syrup or honey

Pour the smoothie into a bowl and top with your compote, coconut and nuts.
