Black Raspberry & Bilberry Chia Bowl
This vibrant overnight chia pot is a simple yet powerful example of food as medicine—a nourishing blend of seeds, berries and fermented dairy designed to support gut health, metabolic balance and cellular protection. Prepared the night before, it transforms into a creamy, satisfying breakfast or snack that delivers sustained energy, fibre and an impressive array of protective plant compounds.
At the heart of the recipe are chia seeds and flaxseeds, two nutritional powerhouses rich in omega-3 fatty acids, soluble fibre and lignans. Together they support heart health, stabilise blood sugar and help nourish beneficial gut bacteria. Pumpkin and sunflower seeds add further plant protein, zinc, magnesium and vitamin E, nutrients that play important roles in immune function, hormonal balance and cellular repair. The addition of unsweetened coconut provides healthy fats and texture, while dried cranberries bring a subtle tartness along with polyphenols that support urinary and cardiovascular health.
What truly elevates this recipe is the inclusion of black raspberry powder and bilberry powder, both exceptionally rich in anthocyanins—the deep purple pigments known for their antioxidant and anti-inflammatory effects. Research led by Dr Gary D. Stoner and colleagues at the Ohio State University Comprehensive Cancer Centre has shown that black raspberries contain unique phytochemicals that may help inhibit cancer cell growth, reduce inflammation and support the body’s natural detoxification pathways. These berries have been studied particularly for their potential protective effects against oral, oesophageal and colorectal cancers, highlighting the powerful role that colourful plant foods can play in long-term health.
The recipe also includes kefir, a fermented dairy rich in beneficial bacteria that supports gut microbiome diversity, digestion and immune resilience. Combined with dairy-free milk and a touch of maple syrup for natural sweetness, the mixture becomes beautifully creamy as the seeds absorb the liquid overnight.
Topped with fresh fruit, walnuts and Greek yoghurt, this bowl becomes a nutrient-dense breakfast packed with fibre, probiotics, healthy fats and protective phytochemicals. It’s a delicious way to nourish the gut, fuel the brain and harness the healing potential of plant foods—one spoonful at a time. ✨
