Iced Coconut Yoghurt & Berry Parfait

Berries are packed full of vitamins and minerals, are high in fibre and polyphenols that give them their fabulous colour.

Polyphenols are compounds loved by our gut, and they are also good for our heart. With their anti-inflammatory and antioxidant properties, polyphenols can help balance cholesterol as well as lower blood pressure and reinforce the lining of the heart.

Blueberries, Blackberries and strawberries in particular, which are high in a type of polyphenol called anthocyanins, are helpful in regulating blood flow and reducing metabolic risk factors that could contribute to heart disease.


INGREDIENTS

500g Coconut yoghurt (I love @cocosorganic_

1 tsp cinnamon

1 tsp mixed spice

3 tbsp vanilla protein powder, I love @vivolife

1.5 tbsp maple syrup

100g cranberries

1 tbsp cacao nibs, I love @naturya

6 brazil nuts, chopped

60g pistaschio, chopped

125g black berries

125g raspberries


METHOD

Line a 5x8inch dish with baking parchment

In a bowl whisk together the yoghurt, protein powder, spices and maple syrup

Stir in cacao nibs, chopped nut and cranberries

Fold in the berries

Spoon into a prepared dish and sprinkle with the remaining chopped nuts

Freeze for at least 3hrs or overnight

Remove from the freezer at least 15 minutes before serving then slice and serve with fruit compote
