15 minute Butterbean & Cumin Soup

Sometimes the simplest recipes are the ones that truly deliver — and this butterbean soup is a perfect example. Made with just five store-cupboard staples, it’s quick (ready in under 15 minutes), comforting, and packed with nutritional benefits.

Why it’s good for you:

Butterbeans – a fantastic plant-based protein source, they’re also rich in fibre to support digestion, balance blood sugar, and keep you feeling full.

Onions & Garlic – part of the allium family, they’re well known for their immune-boosting and anti-inflammatory properties. Garlic in particular supports heart health and gut health.

Cumin – not only does it add a warm, earthy flavour, but cumin has been linked to improved digestion and may help regulate blood sugar.

Vegetable Stock – the base of the soup, hydrating and nourishing, while allowing all the flavours to come together.

Served with a fresh salad on the side, this simple bowl becomes a balanced, nutrient-rich meal you can rely on any day of the week.

Optional Extras

If you’d like to give your soup an extra nutritional boost or a little twist, try adding:

1 tbsp Nutritional Yeast – a natural source of B vitamins (including B12 in fortified varieties), great for energy and nervous system support.

A pinch of Chilli Flakes – for gentle heat and an extra dose of antioxidants.

A swirl of Kefir – to finish, adding a creamy texture plus a dose of probiotics for gut health.


INGREDIENTS

I can of butterbeans

1 shallot, diced

1 clove of garlic, diced

EV Olive oil

1 tsp Cumin Seeds

600ml vegetable stock

Optional Extras: 1 tbsp nutritional yeast, 1/4 tsp chilli flakes, 30ml kefir


METHOD

Drain and rinse the beans

Chop the shallot and garlic

Heat the olive oil in a pan and gently sweat the shallot and garlic approximately 3minutes until translucent

Add the drained beans and half of the stock, bring to the boil and simmer for 5mins

While that is cooking heat 1tbsp of olive oil and add the cumin seeds and fry until fragrant

Add the remaining stock to the soup and blitz in your blender until smooth

Pour into your favourite bowl and spoon over the cumin oil

Serve with salad or life changing bread

If you want to add optional extras, add the nutritional yeast and chilli flakes to the blender before blitzing. Spoon over the kefir when you serve
